Charleston Academy now offers two qualifications within our Albert Roux Kitchen offered in partnership with the University of the Highlands and Islands. Professional Cookery courses are taught by visiting lecturers from the University on Tuesdays and Fridays. 18 Charleston Academy pupils are enrolled for the courses along with pupils from nearby Inverness High School. Our Albert Roux Kitchen offers the young people one of the best equipped training kitchens in Inverness.
On Friday the students were taught how to create salmon supremes using six freshly caught salmon. Some £400 of fish from Marine Harvest had to be cleaned, broken down, de-boned, filleted and prepared into supreme portions. Most of the portions were brought back to the University to be used in other courses. The students were able to prepare and cook their own in our state of the art steam oven, followed by a tasting lesson. Many staff were delighted to buy some of the supremes the young people had prepared.
