Albert Roux Dinner 2016

Our Annual Albert Roux Dinner 2016 took place on Monday 12 September. Once again, students worked with Mr Albert Roux OBE and Chez Roux Chef from the Rocpool Reserve Hotel in Inverness, Mr Javi Dominguez Santos.

Students planned, prepared, cooked and served a three course dinner to 40 paying guests that included a champagne and canapés reception.

Our students were under immense pressure to pull of a flawless evening for our guests which included representatives from the hospitality industry across Inverness and the Highlands.

Among our guests this year were:

  • Ann Sim, regional coordinator for the Youth Philanthropy Initiative.
  • Georgie Parker, Business Development Director at UHI.
  • Ina Davies, also from UHI and former General Manager of the Golf View Hotel in Nairn
  • Councillors Alex Graham and Allan Duffy
  • Rona MacAskil from the Forest Kitchen
  • Kate Morris, Chair of our Parent Council
  • Anne Huggan, Depute Rector Inverness High School

The evening was a tremendous success. Once again we are indebted to Mr Roux and his suppliers who donated the champagne, wine and all of the ingredients. Most importantly Mr Roux and his staff also contributed a significant amount of their time before and after the event to mentor our students.

The video below is made of stills taken by our Higher Photography students. Music on the evening was provided by our Music Teacher Mr Ross Fairfield. Menus were written and produced by our Languages Department.

Well done everyone. The proceeds from the 2016 dinner form part of the schools’ contribution to the Youth Philanthropy Initiative.

Cake & Bake Show

Students and Staff from Charleston Academy Home Economics Department were invited to the Cake & Bake Show in Edinburgh on Friday. Students attended in order to develop their cake production and cake decorating skills as part of their course. Students also developed ideas for the final project element of their course. Great fun was had by all too.

Our Albert Roux Charity Dinner was held on Tuesday 15 September. While this was a show case for our Home Economics Department and their new Albert Roux Kitchen, the evening also allowed Advanced Higher Photography student Liam Black (6S1), an opportunity to photograph an event for his Higher Photography Portfolio. Final of Great Scottish Bake Off

Bake Off Finalists present their finished cakes to our panel of judges

On Friday 30 May, our Home Economics department was a frenzy of activity as S2 pupils competed in our Great Scottish Bake Off final. From 9am until noon, pupils had to make, bake, and decorate a Scottish Themed Cake.

Our Judges, consisting of local Master Bakers Harry Gow and son David Gow, Javier Dominguez (Head Chef at Rocpool), Garry Millard (former pupil and Albert Roux Apprentice) and some of our own staff watched proceedings closely, judging pupils on design, preparation, technique, safety & hygiene and the all important final presentation.

The quality of the cakes was outstanding especially with such pressure on the pupils in the presence of such renowned judges. The overall winner was Morvern Carmichael whose Kilt and Bagpipe themed cake impressed the judges, right down to the music themed base too. The judges awarded five prizes overall and these will all be given out at assemblies later.

Well done everyone for participating and putting in such a great effort. Thank you also to our judges for giving up so much of their valuable time.

Albert Roux Kitchen

UnknownOur ambitious plans to see a fully equipped, industry standard training and hospitality kitchen took a massive step forward recently. The City of Inverness Committee approved an award of £40,000 towards our over all costs.

BBC_SCOTLAND_CMYKTogether with contributions from Highland Council and our own fund raising it’s now hoped work on the kitchen project can be competed during session 2013-14. The news has drawn widespread media attention.
